What is it?

Ground Iranian pistachio — nothing else: no added sugar or oil. Comparable to peanut butter, but with pistachio: dense, green, bold, and buttery. Equally at home in baking (creams, glazes, financiers) as in savory dishes, in a pesto, a risotto, or a sauce.

How to use it?
  • In pastries. A spoonful in a cream, a frosting or a financier batter: the taste of pistachio, without coloring or sugar.

  • In a sauce. Thinned with a little cooking water or cream: a green sauce for pasta or risotto.

A word from the founder

Iranian pistachios are the deep green of my childhood, the colour of the Rafsanjan orchards. When made into a paste, with nothing else added, they retain that honest, buttery taste that I haven't found anywhere else.

Votre pâte de pistache est-elle 100 % pistache ?

Oui : 100 % pistaches d'Iran, simplement torréfiées puis broyées — sans sucre, colorant ni arôme ajouté, et sans huile ajoutée.

Pourquoi n'est-elle pas vert vif ?

Parce que c'est sa couleur naturelle : une pâte de pistache pure tire vers le vert-kaki. Le vert fluo des versions industrielles vient de colorants et d'arômes ajoutés, souvent à l'amande amère.

Comment l'utiliser et la doser ?

En pâtisserie, glace, crème ou tiramisu : comptez 2 à 3 cuillères à soupe pour parfumer une préparation. Elle s'utilise aussi en salé — détendue avec un peu d'eau de cuisson ou de crème, elle devient une sauce pour des pâtes ou un risotto, et remplace les pignons dans un pesto.

Quelle différence avec une « crème de pistache » ?

La crème de pistache contient du sucre, et parfois d'autres ingrédients ; notre pâte est 100 % pistache. Vous la sucrez vous-même, selon la recette.

Comment la conserver ?

Au frais après ouverture, pot bien refermé. L'huile naturellement contenue dans la pistache peut remonter à la surface : c'est normal, mélangez avant emploi.
